Welcome to Gourmet Foods
Gourmet Foods is an advanced culinary class designed to take your knowledge and skills to a higher level. Culinary Foundations is a pre-requisite. This class is a combination of skills, language arts, math, science, and communication. Labs, projects, and classwork will all be more challenging, and my expectations higher. There will be homework. We will cover: Pasta, grains, legumes, proteins, salads and garnishing, restaurant service, and purchasing. Your final will be a regional US cooking challenge.
Grading:
Grading consists of weekly kitchen lab scores, in-class work, tests, and projects. Lab groups will change throughout the semester. If you are off task, or do not complete your tasks, you will lose points. Each student is expected to participate in class discussion and cooking activities.
Full participation in class includes:
- Trying the food prepared in class
- Kitchen set up and clean up
- Following safety and sanitation standards
- working with all members of the class
- participating with your group on planning, food preparation, and time management
If you have an excused absence on a lab day, you can make up points by either cooking at home or completing the alternative assignment in Canvas.
Late work will be accepted for 50% of points up to two (2) weeks after it is due.
If you are absent, you are responsible for making up any missed work.
Grading Scale:
90%-100% A
80%-89% B
70%-79% C
60%-69% D
59% or below F
Technology:
Students will use their Chromebooks and other electronic devices in a manner that is responsible and does not disrupt the learning environment. This includes:
- NO CELL, BELL TO BELL. Cell phones are to be stowed in backpacks during class. Cell phones shall not be out during class at any time.
- Using the Chromebook to access Canvas courses, respond to emails, log-in to zoom meetings, and participate in class
- Refraining from using Chromebooks to violate school policies, such as those regarding plagiarism, inappropriate content, and cyberbullying
Students will abide by all guidelines outlined in the Renton School District Responsible Use Policy.
Rules:
If any student is acting in a way that is un-safe or disrespectful in the kitchen, they will be unable to work with the class for the remainder of the period and will not be able to make up the lab points for that day. Examples of these types of activities include but are not limited to:
- No phones, earbuds, or headphones allowed in the kitchen – student will receive a zero for the day’s lab
- Running, horseplay, wrestling, pushing, shoving, distracting other groups/not working with your assigned group
- Throwing any object including food
- Intentionally tampering with food to make it too spicy or unsuitable to consume in any way.
- Incorrect use of equipment
- Neglecting to wash hands
- During class time, phones will be left with me, or in a backpack in exchange for the bathroom pass.
- Appropriate clothing must be worn on cooking days and long hair will be tied back. Appropriate clothing will not be bulky, and will have sleeves. No coats. Shoes must be closed toe, no sandals or flip flops. Aprons will be supplied and must be worn. If you are not properly attired you will not be allowed to cook and will lose points for that day. No one will be excused from the kitchen until it is clean, so time management and staying on task is very important. If the kitchen is not clean when the bell rings, everyone loses points for the day's lab.
I expect:
- Proper sanitation procedures to be followed in the kitchen, and everyone is expexted to participate including in the clean-up.
- Phones stored in backpacks and only used with permission in the classroom. NO TEXTING/NO PHONE CALLS. Disciplinary action (including detention) will be taken for using a phone without permission (this includes for games, phone calls, texting, social media)
- Respect, no talking back, and wise use of time.
